Kale Fajitas

Spending time with my nieces and nephews definitely changes my eating habits, and trying to get in all my servings of fruits and veggies can be a challenge. I came up with this family friendly recipe that even the picky eaters enjoyed!




Organic Grassfed ground beef

1 Yellow Onion (cut in strips)

2 Red Bell Peppers (cut in strips)

1 Bunch Lacinato Kale (remove stems, chop)

Tortillas (Gluten Free corn or Flour)

Seasoning Mix: sea salt, black pepper, cumin, dried oregano, smoked paprika

Optional toppings: cheese, guacamole, sour cream, hot sauce, diced tomatoes


Slice onions and bell peppers into long strips, and sautée in large pan until beginning to wilt. Add ground beef, and stir until browned and cooked completely. Add seasoning mix and 2 tbsp of water. Add chopped kale for the last 2 minutes, and the steam from adding the water will cook it down quickly. Serve on tortillas with toppings of your choosing. Great with steamed rice!
