Chicken & Mushroom Quick Bake

Organic Chicken thighs (approx 2 per person)

Assorted Mushrooms (Crimini, Oyster, Button)

Cherry Tomatoes

Red Potatoes

No-Salt Seasoning

Herb de Provence

Olive Oil

Salt & Pepper



Preheat oven to 400* F Get chicken seasoned with  salt, pepper and no-salt seasoning. I always check for seasonings that have no salt, no GMOs or MSG, so I can control the amount of salt going into my food. Wedge the potatoes. Thin wedges will cook faster, I would recommend 1/4 inch at the widest point. Put chicken and potatoes on a baking sheet in a single layer and put in the oven.

While the chicken and potatoes cook, chop the mushrooms. After 8-10 minutes into the cook time for the chicken, take it out and flip the chicken, add mushrooms, tomatoes and herbs de Provence. Put back into oven and let finish cooking (around 15 minutes longer) 

Take out and enjoy with a nice Cote du Rhone!
